The “sweet milk cream” found in many of our delicacies is known as Rabri or Malai. It is made by slow-boiling full-cream milk in large iron kadhai (pans) until it reduces and forms thick layers of cream. Traditionally, it was used for its anti-bacterial properties and to signify the purity of the offering.
